Aruba’s Bubble Gum Tropical Drink

Okay, I just spent an hour outside for a ground breaking ceremony on an incredibly blustery day! So I’m thinking about Aruba and decided to share another drink recipe with you!

Aruba’s Bubble Gum

Ingredients

  • 1/2oz Vodka
  • 1/2oz Banana Liquor
  • 1/2oz Peach Schnapps
  • 1oz Orange Juice

Directions

Step 1
Combine ingredients over ice and stir.

Easy Pierogi Casserole

This is a little time consuming to make, but it’s worth it!

Pierogi Casserole

Serves 12
Prep time 1 hour
Cook time 30 minutes
Total time 1 hour, 30 minutes
This is an easy and delicious casserole if you love potato and cheese pierogies.

Ingredients

  • 1 box Large Shells
  • 1 box Instant Potatoes
  • 2 cups Shredded Mild Cheddar Cheese
  • 1 Large Onion (Sliced Thin)
  • 1 cup Butter

Directions

Cook the Pasta
Step 1
Bring water to boil, cook shells and drain pasta.
Cook the Onions
Step 2
As the pasta is cooking, melt 3/4 cup of butter in a skillet and add onions. Cook slowly.
Prepare the Filling
Step 3
Make the box of instant potatoes (about 16-20 servings) as directed on box (either microwave or stove directions). Once cooked, add shredded cheddar cheese and mix until melted.
Prepare the Casserole
Step 4
Melt 1/4 cup of butter and pour it in the base of a casserole dish. Stuff the shells with the potato and cheese mixture and place into the casserole. Once all of the shells have been filled, pour the onion & butter mixture from the skillet over the top of the casserole.
Cook & Serve
Step 5
Cover the casserole cook for 20-30 minutes at 325° until hot.

  • 1/2oz Banana Liquor
  • 2 oz Pineapple Juice

Hungarian Chicken & Dumplings

Hungarian Chicken & Dumplings (Spaetzle)

My Father-in-law once said, "How did I life my entire life without this meal?" This recipe came from my Grandma Miller, who made very many Hungarian dishes. My Mom made it all the time and handed it down to me. I know it's my neices' favorite meal and will continue to get passed down.

Ingredients

  • 2 Large Onions (Finely Chopped)
  • 1 teaspoon Garlic Powder (or you can use 1 clove garlic, finely chopped)
  • 1/2 cup Butter
  • 6-8 pieces Chicken (With skin — helps with flavor)
  • 2 tablespoons Paprika (see my note section)
  • 4 cups Chicken Stock (I use 4 Chicken Bullion Cubes with 4 cups water)
  • 1 cup Sour Cream
  • 3 cups Flour
  • 1 cup Water
  • 1/2 teaspoon Salt
  • 4 Large Eggs

Note

I use regular Paprika that you purchase in the grocery store. But some Hungarian prefer to use a more traditional Paprika — that are typically spicier or hotter.

Size of the Dumplings: You can make the dumplings any size you like. Drop smaller amounts of dough into the boiling water for smaller dumplings. I usually make larger dumplings for a dinner meal.

Directions

Prepare the Chicken
Step 1
In an electric skillet, melt butter and sauté onions and garlic. Add the chicken and sprinkle with Paprika. Brown the chicken. Add the chicken stock and cover. Simmer for 30 minutes.
Prepare the Spaetzel (Dumplings)
Step 2
Beat the eggs with 1/2 tsp. salt in a glass bowl with a fork. Add flour and mix. Add water a little at a time. To get the perfect consistency of the dumplings, make sure the dough is not too stiff, yet not too runny. It should be springy. The dumplings will seem very heavy if the mixture didn't have enough water. They should be very light and fluffy. Let stand about 30 minutes.
Make the Dumplings
Step 3
Drop small pieces of the dough using a teaspoon into boiling water. Continue to make dumpling after dumpling. They are ready to be removed from the water once they rise to the surface. Drain.
Serve
Step 4
Add sour cream to the top of the chicken, simmer for a few minutes without coming to another boil and pour into a bowl. Add the spaetzels (dumplings) and serve immediately.

Aruba’s Yellow Belly Tropical Drink

Sweet tasting drink from the Divi Divi Resort in Aruba.

Ingredients

  • 1oz White Rum
  • 1oz Vodka
  • 1/2oz Banana Liquor
  • 1/2oz Orange Juice
  • 1/2 oz Pineapple Juice

Step 1
Add all ingredients with ice and mix well. Adjust ingredients to taste if desired.

Chicken Casserole

Tomorrow I go back to the office — the first time since my surgery last December! I am almost giddy thinking about getting back to things and being around all my coworkers and friends. So today I decided I would make one last “bigger” dinner for Tom. It snowed all day, so I wanted to create some good comfort food.

I found this recipe last year on Pinterest.com. I have messed with it over and over, trying to get the perfect filling for inside the Crescent Rolls. So I’ve updated the recipe to include mild cheddar cheese and a buttery-onion flavored chicken (using the Chicken recipe from my Hungarian Chicken and Dumplings, minus the Paprika).

Now this took a while to make, just because the chicken takes and hour. But if you have leftover chicken or turkey, this is a quick and simple recipe! Although, I must tell you, if you make the buttery-onion flavored chicken, you won’t regret it! Enjoy! My husband sure did!!!

Cheesy Chicken Crescent Roll Casserole

This recipe is a variation of a Pillsbury Crescent Roll Up recipe that I first came across on Pinterest. It can be made in 15 minutes if you have leftover chicken available for shredding. However, I like to make this buttery-onion shredded chicken, because it gives the roll ups such buttery flavor. I also add mild cheddar cheese instead of swiss cheese.

Ingredients

  • 3 pieces Chicken (I use two legs and one breast, with bone and skin)
  • 1/2 cup Butter (1 Stick)
  • 3 cubes Chicken Bullion
  • 3 cups Water
  • 1 heaped tablespoon Minced Onion
  • 1 teaspoon Garlic Powder (Sprinkle to taste)
  • 1 dash Salt (Sprinkle to taste)
  • 1 dash Pepper (Sprinkle to taste)
  • 1 can Pillsbury Crescent Rolls (8 in can)
  • 2 cans Cream of Chicken Soup (For less creamy dish, use only 1 can of soup)
  • 1/2 can Milk
  • 2 cups Mild Cheddar Cheese (Shredded)

Directions

Prepare the Chicken
Step 1
You can use any shredded chicken—left overs are great. For purposes of this recipe, I am making a very tasty shredded chicken, based on my chicken and dumpling recipe (minus the Paprika).

In a skillet, melt 1 stick of butter and add minced onions. Brown chicken. Sprinkle with garlic powder, salt and pepper. Add 3 cups of water with 3 chicken bullion cubes. Cover and simmer for 45-60 minutes on 350° until chicken falls away from the bone.

Let chicken cool, remove and discard skin and shred. Set aside.
Preheat Oven
Step 2
Preheat Oven to 350°. Grease a 9" x 13" casserole dish with butter or cooking spray. Set aside.
Prepare the Casserole
Step 3
Mix together cream of chicken soup, milk and cheese and set aside.

Add about 1/3 of the soup mixture to the shredded chicken to bind it together. Add another 1/3 of the mixture to coat the base of the casserole dish. The remaining 1/3 will be poured over the roll ups.

Unroll the Crescent strips into eight triangles. Top the large part of the crescent triangle with the shredded chicken mixture. Roll up and place in the casserole. Once all eight roll ups are added to the dish, pour the remaining mixture over all.

Bake at 350° for about 30 minutes until hot and bubbly and golden brown.

Zesty Homemade BBQ Sauce

It’s amazing when you go to the supermarket to buy BBQ sauce and there are literally dozens, even hundreds of choices. Everything from hot to sweet and everything in between and then some. And they truly have some of the most creative packaging, I’m sure because it’s such a crowded space — getting something to appeal to you is super important. Well, my husband and I have never been overly successful in finding the perfect BBQ sauce. It’s usually too hot — and if we go the mild route — way too sweet. So I decided that I would go on a quest to make the perfect homemade BBQ sauce.

So I started with — Chili Sauce. Why? Because, I have a Ham BBQ recipe that uses Chili Sauce as the main ingredient, and it is literally the best Ham BBQ (I’ll have to post that recipe the next time I make it).

You can also add more or less spices in your sauce. And I tend to use garlic powder and minced onions versus the real thing, because I always have it on hand. This BBQ sauce works so well on pulled pork (and I promise to post an easy slow cooker pulled pork in the future). Please feel free to comment on any variation that is successful for you!

Pam’s Zesty BBQ Sauce

This is a simple BBQ sauce recipe using ketchup and chili sauce. To make it sweeter, add more brown sugar and soy sauce. Add more black pepper and garlic powder for zest. This recipe is a variation of an online recipe that I've tweaked to get the perfect flavors.

Ingredients

  • 1 cup Chili Sauce (12 oz Bottle)
  • 1/2 cup Worcestershire Sauce
  • 1/4 cup Ketchup
  • 1/4 cup Soy Sauce
  • 1/2 cup Brown Sugar
  • 1 heaped tablespoon Dry Mustard
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Black Pepper ((add to taste))

Directions

Step 1
Add all ingredients in a sauce pan over low heat on the stove. Cook for 30 minutes, stirring occasionally. Add to pulled pork or chicken. Refrigerate any remaining sauce.

Quick and Easy Side Dish

Hello chefs! I’ll be adding simple, delicious, comfort-food dishes to my blog. These are tried and true recipes that I make often! Enjoy some of the ethnic recipes, as I’ll have some traditional Polish and Hungarian dishes. This first recipe is my “go to” side dish for everything.

Once you try it, you’ll find yourself making it often. You can make this in a casserole or in a crock pot. If you use a crock pot, plan to let it cook for at least 3 hours. The longer you cook this recipe, the creamier the hash browns become. This is a favorite for everyone!

Pittsburgh Potatoes

This side dish is bubbly and hot with soft potatoes and cheddar cheese. Make it once and everyone will want this recipe!

Ingredients

  • 32oz Frozen, Shredded Hash Browns (1 bag)
  • 1/2 cup Melted Butter
  • 1 can Cream of Chicken Soup (Do not use fat free!)
  • 3/4 cans Milk (Use the Cream of Chicken soup to measure)
  • 2 cups Shredded Cheddar Cheese
  • 8oz Sour Cream (1 cup)

Directions

Preheat Oven

Preheat oven to 350°
Combine Ingredients

Mix butter, sour cream, soup, milk and cheese in a bowl. Set aside. Break up frozen potatoes and add to mixtures. Mix until well combined.

Pour into a greased 9 x 13" baking dish, cover and bake for at a minimum of 1 1/2 hours. The longer this dish bakes, the creamier the potatoes become.
